I usually make barbecue ribs for dinner, but sometimes I prepare them for family gatherings or special events. My family members love barbecue ribs. Using the right sauce makes them even better, and they taste so good. Barbecue ribs with a steak-like and garlic flavour are excellent; steak ribs are the best ribs.
Barbecue ribs are typically made in the oven, but you can also use a grill. However, the oven makes them perfect. The ribs are prepared with a spice mix, slow-cooked, and topped with barbecue sauce, resulting in a smoky flavour that is just delightful. It’s truly delicious!

For barbecue ribs, always choose fresh or baby back ribs. Baby back ribs are the most popular cut of pork ribs, but you can use other ribs, even frozen ones. When using baby back ribs, they are tender and not too fatty. You can also use baby pig ribs.

For the Rub:

For the Barbecue Ribs:

2 kg ribs
-
3 cups sweet alcoholic apple cider
-
Olive oil
For the Homemade Barbecue Sauce:
-
2 cups tomato ketchup
-
1 cup apple cider vinegar
-
½ cup sugar
-
1 cup water
-
1 tablespoon mustard powder
-
1½ tablespoons molasses
-
1 tablespoon garlic powder
-
Salt
-
1 tablespoon black pepper
-
1 tablespoon cayenne pepper
How to Make Barbecue Ribs
- Spice Rub: Start by preparing the spice rub for the ribs. In a small bowl, combine salt, smoked paprika, sugar, garlic powder, onion powder, dry mustard, oregano, cayenne pepper, and black pepper. Mix well until thoroughly combined. This is your homemade barbecue spice rub.
- Prepare the Ribs: Clean the ribs, trim any excess fat, and use a knife to loosen the membrane around one of the bones. Use a paper towel to pat the ribs dry. Apply the rub on all sides of the ribs, massaging it in with your hands (you can use gloves). Let the ribs rest for 25 minutes.
- Preheat the Oven: Preheat the oven or smoker to 220°F. Place the ribs in a single layer on a baking tray. Pour the apple cider underneath the ribs, cover with foil, and bake for 1.5 hours, or until the meat develops a smoky flavour.
- Barbecue Sauce: While the ribs are baking, prepare the barbecue sauce. In a saucepan, combine tomato ketchup, vinegar, paprika powder, garlic powder, water, sugar or honey, cayenne pepper, black pepper, salt, and molasses. Simmer over medium heat for 50 minutes until the sauce thickens.
- Olive Oil: After 1.5 hours, remove the foil from the ribs, apply olive oil to all sides, and bake for another 12 to 15 minutes until the rub becomes nice and crusty.
- Apply Barbecue Sauce: When there are 15 minutes left, remove the ribs from the oven, transfer them to another tray, and pour over any extra juices. Apply barbecue sauce on all sides of the ribs and bake for 8 minutes. Repeat this process 3 or 4 times until the ribs are thickly coated in sauce.
- Serving: Let the ribs cool for 10 minutes before slicing. Serve with corn on the cob, macaroni salad, mashed potatoes, and additional sauces or creamy salad.

How to Store and Reheat Barbecue Ribs
Store the baked barbecue ribs in an airtight container in the refrigerator for up to 3 days, or freeze them for up to 2 months. When ready to eat, thaw the ribs, brush with barbecue sauce, cover with foil, and warm in a 250°F oven for 30 to 40 minutes until heated through. Remove the foil, brush with more sauce, and warm for another 10 minutes before serving.
