How To Make Potato and Leek Soup

Potato leek soup is simple and easy to make. Follow the measurements in my recipe below for a perfect result.

  1. First, take the potatoes, peel them, slice them, and cut them into cubes. Submerge the cubes in cold water and set them aside.
  2. Clean the leeks, cut the white and green parts, and chop 2 cups of leeks. Set them aside.
  3. Next, take a large pot, heat it, and add butter. Wait for the butter to melt. Once melted, add chopped garlic, fry, and then add chopped leeks. Cook until soft and wilted.
  4. Add the potatoes and cook well. Add some salt and black pepper, mix well, then cover the pot and cook for 5 minutes. After that, add chicken stock and water, mix well, cover the pot, and cook for 10 to 15 minutes or until the potatoes are tender.
  5. Once the potatoes are tender, remove the pot from the heat and use a hand blender to blend until the soup is smooth. You can also use a standard blender for a smoother texture.
  6. Once smooth, heat the pan again and add heavy cream. Cook for 5 minutes. The cream gives the soup a delicious, silky, rich, and smooth texture. It enhances the taste.
  7. Taste and adjust the seasoning with salt and black pepper. The potato and leek soup is now ready.
  8. Finally, serve the hot soup garnished with fresh thyme, chives, or any garnish you prefer.
