Potatoes: Of course, you need potatoes. Mainly, the recipe requires potatoes. I prefer russet potatoes, which are the best for potato and leek soup. They make the soup have a lovely creamy texture. I need 2 cups of chopped russet potatoes.

How To Make Potato and Leek Soup
Potato leek soup is simple and easy to make. Follow the measurements in my recipe below for a perfect result.
- First, take the potatoes, peel them, slice them, and cut them into cubes. Submerge the cubes in cold water and set them aside.
- Clean the leeks, cut the white and green parts, and chop 2 cups of leeks. Set them aside.
- Next, take a large pot, heat it, and add butter. Wait for the butter to melt. Once melted, add chopped garlic, fry, and then add chopped leeks. Cook until soft and wilted.
- Add the potatoes and cook well. Add some salt and black pepper, mix well, then cover the pot and cook for 5 minutes. After that, add chicken stock and water, mix well, cover the pot, and cook for 10 to 15 minutes or until the potatoes are tender.
- Once the potatoes are tender, remove the pot from the heat and use a hand blender to blend until the soup is smooth. You can also use a standard blender for a smoother texture.
- Once smooth, heat the pan again and add heavy cream. Cook for 5 minutes. The cream gives the soup a delicious, silky, rich, and smooth texture. It enhances the taste.
- Taste and adjust the seasoning with salt and black pepper. The potato and leek soup is now ready.
- Finally, serve the hot soup garnished with fresh thyme, chives, or any garnish you prefer.
