- Roasting the Vegetables:
- Preheat the oven to 400°F. Clean the fresh tomatoes and carrots thoroughly.
- Cut them in half and place them on a baking sheet. Drizzle with olive oil, salt, and black pepper.
- Roast them for 30 minutes until they’re juicy. Set them aside to cool for about 8 minutes.
- Cooking the Base:
- In a large pot, heat olive oil. Add chopped onion and garlic, and cook until softened and golden.
- Add the roasted carrots and tomatoes, then cook well. Add chicken stock, salt, black pepper, and basil.
