  1. Roasting the Vegetables:
    • Preheat the oven to 400°F. Clean the fresh tomatoes and carrots thoroughly.
    • Cut them in half and place them on a baking sheet. Drizzle with olive oil, salt, and black pepper.
    • Roast them for 30 minutes until they’re juicy. Set them aside to cool for about 8 minutes.
  2. Cooking the Base:
    • In a large pot, heat olive oil. Add chopped onion and garlic, and cook until softened and golden.
    • Add the roasted carrots and tomatoes, then cook well. Add chicken stock, salt, black pepper, and basil.
    • Use an immersion blender or regular blender to puree the soup until smooth. Boil for 5–8 minutes.
