For example, chuck roast comes from the shoulder, and rump roast comes from the hindquarter. Most people buy beef already packed at the supermarket, but I use fresh rump roast when making roast beef. It is less expensive and easy to buy. You can also use sirloin tip, round roast, or rump, depending on what’s available to you.

Instructions for the Best Roast Beef

Prepare the Beef: If you are using frozen beef, take it out of the freezer and let it sit at room temperature for 1 to 1.5 hours for the best results. Then clean the beef and dry it well with a kitchen towel. In a medium bowl, add olive oil, kosher salt, minced garlic, and minced fresh rosemary leaves. Mix well until combined. Rub this mixture all over the roast beef, then let it sit for 30 minutes.

Roasting: Preheat the oven to 350°F. Roast the beef for 1 to 1.5 hours for medium, or 2 hours for medium-well, depending on the size of the roast. Once cooked, remove the roast beef from the oven and let it rest for 15 minutes before serving.

Making the Gravy: In a pan, add 1 teaspoon of butter and 1 tablespoon of flour. Cook for 20 minutes until well combined. Then add beef stock and mix well. When the gravy starts bubbling and thickening, remove it from the heat.

Serving: Slice the roast beef and pour the gravy over the slices. Serve with fries (potato or carrot), mushroom sauce, or a mixed salad with tomatoes and cucumber. The roast beef is very tasty!

Store oven-baked roast beef in an airtight container. It will last for 3 days in the fridge. Reheat it in the oven. It can also be frozen for 3 months. Before reheating, let it come to room temperature, then reheat in the oven at 350°F.
