Ingredients:
* 1 1/2 cups rice
* 1 large egg
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon cinnamon
* 1/4 teaspoon of salt
* tablespoon cooking oil 1
Description:
* Put the remaining rice, egg, vanilla extract, cinnamon and salt in a bowl and mix well.
* Add 1/2 tablespoon of cooking oil to a large pot (cast iron, ceramic or Teflon of your preference). Using a 1/4 cup measuring cup, add some of the rice mixture to the hot skillet. Use a spatula to press the rice into the mound until it is 1cm thick.
* Fry the crepes for a few minutes on both sides until they are frosted and lightly browned and crispy on the outside. Do not flip the crepe until the egg has hardened. Cook until the egg no longer hardens. Make sure the entire crepe is on the spatula before flipping.
* After frying the first 3 crepes, add 1/2 tablespoon of oil to the pan and fry the second crepe in the same way.

When we were kids, my mom always made fun little pancakes. If you have leftover rice from the night, don’t throw it away, make this special breakfast. It’s nothing fancy, but it’s a nice change from your usual breakfast, and I think it’s easier than pancakes. Leftover rice is safe to eat:
Yes, if properly cooled and stored after cooking. Rice may contain bacteria called Bacillus cereus, whose spores are resistant to cooking. If rice is left at high temperatures (40-140°F) for extended periods of time after cooking, spores can “hatch.” When the spores grow, the bacteria become active and produce toxins that feed on the grain and make us sick. Reheating what has already been cooked will kill active bacteria, but it does not kill the bacteria or remove the toxins from the rice, so the rice is still potentially dangerous.
Ways to properly store rice:
Bacillus cereus contamination does not show any symptoms or odor, so it is important to cool rice immediately after cooking. Transfer the rice to a new bowl (do not put it in a hot bowl) and if you are cooking a lot, divide it into portions and put it in the refrigerator. Do not leave food at room temperature. The goal is to cool the rice to below 40°F within 2 hours. Therefore, the sooner you put it in the refrigerator, the better.
Fun fact: I was a microbiologist and worked with Bacillus cereus every day. It’s an environmental pathogen that lives on the surface of almost anything and is generally harmless unless it gets into places it shouldn’t, like our food.
What do pancakes taste like?
Pancakes taste similar to rice pudding but have a crispy crust. If you don’t like pasta (it’s better with real rice underneath), then you won’t like pancakes either. I don’t add a lot of sugar to the pancakes themselves. So to keep the pancakes from being too sweet, they pour some maple syrup on top. If you want the pancakes to be sweet, add 1-2 teaspoons of sugar to the dough. Crepe:
I like maple syrup on pancakes. It goes very well with the cinnamon flavor of the pancakes. If you want to go extravagant, you can put a little butter on top, but since the pancakes are fried, this isn’t always necessary. I also like to spread peanut butter on my pancakes sometimes.
