- Chicken tender: Chicken tender made from chicken breast is the best option. Now I take 1 kg chicken breast and cut the chicken breast into long slices.
- Seasoning: I use different seasonings. That means 1 tablespoon kosher salt, 1 tablespoon black pepper, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1/2 teaspoon paprika.
- All-purpose flour: Flour is the main point. Because to make fried chicken, of course, flour is a must. I use 3/4 cup. Mainly flour helps coat and gives golden brown and very crispy.
- Cornstarch: I use 1 cup cornstarch when mixed with flour. It makes chicken tender very crispy and helps with gluten.
- Baking powder: I use 1 tablespoon baking powder for this recipe. Chicken tender becomes very fluffy and crunchy.
- Seasoning for dredge: 1 tablespoon kosher salt, 1 tablespoon black pepper, 1/2 tablespoon garlic powder, 1/2 tablespoon onion powder, and 1 teaspoon paprika.
Batter for Chicken Tender:
- All-purpose flour: 1 cup all-purpose flour used for batter.
- Egg: I use 1 egg for batter and mix well so that no lumps.
- Milk: I use 1 cup milk. Milk makes chicken tender very tasty. But if you want, use water or buttermilk. That’s your choice.
- Salt and black pepper: I use 1 teaspoon kosher salt and 1/2 teaspoon black pepper.
- Oil: Oil used for frying.
How to Make Chicken Tender
- At first, take medium bowl and add sliced chicken tender. Add all dry seasonings, that means salt, black pepper, garlic powder, onion powder, and paprika. When all dry ingredients are added, mix well so chicken tender is well coated. Then set aside for 30 minutes.
- Then take another bowl and make chicken tender batter. Take a large bowl and add all-purpose flour, cornstarch, black pepper, salt, egg, and milk. Mix well until a combined batter forms. Set aside.
- Then take another large bowl for chicken tender dredging and add all-purpose flour, baking powder, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. Mix well. If needed, add some water so dry seasonings are well mixed. I use my hand to mix dry dredge well.
- Then take one piece of chicken tender, coat in the batter, and use hand to coat in seasoned flour. Shake off any excess breading and set aside. Use a baking tray or large plate. Repeat the same process for all chicken tenders and place on the tray.
- Immediately fry—do not wait, because baking powder is used.
- Then take a medium fry pan and wait for it to heat. When hot, add oil. Wait until oil is hot (you can use a thermometer). When oil is hot, add chicken tender and fry until golden brown.
Chicken tender is very delicious food—very crispy outside and very juicy and soft inside. When golden, remove from pan and place on plate. Use kitchen towel to remove extra oil.
- Finally, serve. When all chicken tenders are fried, serve with any sauce or honey mustard sauce and salad. I love honey mustard sauce and salad. But you can use any sauce and salad.
